How to make Rainbow Cake
Requirements
- Ingredients:
- 2 ½ cups all-purpose flour
- 2 ½ tsp baking powder
- ½ tsp salt
- ¾ cup unsalted butter (softened)
- 2 cups granulated sugar
- 4 large eggs
- 2 tsp vanilla extract
- 1 cup whole milk
- Gel food coloring (red, orange, yellow, green, blue, purple)
- For Buttercream Frosting:
- 1 cup unsalted butter (softened)
- 4 cups powdered sugar
- 2-3 tbsp heavy cream
- 1 tsp vanilla extract
- Equipment:
- 6 cake pans (8-inch or 9-inch)
- Mixing bowls
- Hand or stand mixer
- Spatula
- Parchment paper
- Cooling rack
- Offset spatula or knife
Instructions
Step 1: Preheat and Prepare the Pans
- Preheat your oven to 350°F (175°C).
- Grease and line six cake pans with parchment paper. If you don’t have six pans, bake the layers in batches.
Step 2: Make the Cake Batter
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, beat the butter and sugar together until light and fluffy (about 3 minutes).
- Add the eggs one at a time, beating well after each addition.
- Mix in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture in three additions, alternating with the milk. Begin and end with the dry ingredients.
Step 3: Divide and Color the Batter
- Divide the batter evenly into six bowls. Use a kitchen scale to ensure the layers are uniform.
- Add gel food coloring to each bowl to create vibrant red, orange, yellow, green, blue, and purple batters. Mix thoroughly until no streaks remain.
Step 4: Bake the Cake Layers
- Pour each colored batter into its prepared cake pan and spread evenly.
- Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to a cooling rack to cool completely.
Step 5: Make the Buttercream Frosting
- Beat the softened butter in a mixing bowl until creamy (about 2 minutes).
- Gradually add the powdered sugar, one cup at a time, beating on low speed.
- Add the vanilla extract and 2 tablespoons of heavy cream. Increase the speed to medium-high and beat for 3-5 minutes until light and fluffy. Adjust the consistency with additional heavy cream if needed.
Step 6: Assemble the Rainbow Cake
- Place the purple cake layer on a cake board or serving plate. Spread a thin layer of frosting over the top using an offset spatula.
- Repeat with the blue, green, yellow, orange, and red layers, adding frosting between each layer.
- Once all layers are stacked, apply a crumb coat (a thin layer of frosting) over the entire cake. Chill the cake for 30 minutes.
Step 7: Frost and Decorate the Cake
- Apply a final layer of frosting over the chilled cake, smoothing it with an offset spatula or a cake scraper.
- Decorate as desired with sprinkles, piping, or other decorations.
Step 8: Serve and Enjoy!
- Slice the cake to reveal the vibrant rainbow layers. Serve and watch everyone’s delight!
